Noodles & Company serves up a world of cuisine

You can go around the world with just one stop at Hudson's newest restaurant, Noodles & Company, which opened this week at 1055 Pearson Drive in the Ban Tara retail area.

The chain was founded in a Denver neighborhood in 1995 by Aaron Kennedy, who struck upon the idea while he was living in New York. He realized that if you wanted Italian, Chinese or American entrees you had to go to completely different restaurants. Applying the concept of "fast" food and the fact that nearly every country has some version of noodles, Kennedy brought them together in one restaurant.

Today, Noodles & Company has nearly 300 locations throughout the United States featuring Asian, Italian and American pasta based entrees, as well as soups and sandwiches. After Colorado the first state in the nation to have a Noodles & Company was Wisconsin. Today, including Hudson, there are now 35 restaurants in the state.

"Wisconsin is a big piece of our history," said Mandy Melby, company spokesperson. "The people in Wisconsin are so welcoming to us."

The Hudson location is 2,700 square feet. It seats 79 inside and 32 outside on the patio.

"Everything is produced fresh," said Melby. "Every dish is made fresh and we do all of our prep work twice a day."

According to Melby the Hudson location is designed to highlight the concept that everything is fresh by pulling commercial grade refrigerators out in front; using a lot of natural light, which is an inviting environment for customers.

"'Your world kitchen with global flavors just down the road' is our new theme," said Melby. "If folks have gone to a different location, there is a different look and feel to Hudson, an expanded menu and more global entrees."

For ten days, Hudson will be the only Noodles & Company to offer three spring time specials, from opening day until April 10 after which they will be available elsewhere. They are the garden pesto saute with gluten-free noodles, a spring time flatbread and the asparagus stack.

At any time diners may customize any of the menu offerings and substitute ingredients.

"Flavor guarantee is one of the cornerstones at Noodles," said Melby. "We want to make sure that everyone has a good experience and have their order exactly as they want it."

Another feature they have is the "Freestyle" machine distributed by Coca Cola. It allows the customer to create up to 200 different flavor options from nearly all of the soft drink products made by Coke. Between 24 and 30 employees will work at the Hudson location including both part-time and full-time.

Noodles & Company in Hudson is open Sunday through Wednesday from 10:30 a.m. to 9 p.m. and Thursday through Saturday from 10:30 a.m. to 10 p.m. For more information and their menu go to
