The timing was right for Michael and Radmila Rasmussen. Avid boaters, he a personable individual who was once commodore of a yacht club, she having decades of experience in the restaurant business, were surprised to find a listing online for a location they couldn't believe was available.

February 18 it was official. The couple were the new owners of Dolce, a Hudson restaurant located at 106 Buckeye Street. Michael, a native of Mendota Heights, is a 30-year veteran of the corporate world who most recently worked for 3M's Imation. Radmila, who was born in the Czech Republic, grew up in the restaurant business and went to UW-Stout, majoring in restaurant and hotel management.

"It is perfect," said Michael. "Close to the river with parking close by. We were surprised to find it." The couple had been looking for a location to start a business on the river, so this seemed the right place for them.

For the time being, the menu will remain similar with the emphasis on pizza and Italian pasta dishes but plans are to make it more of a European café offering specials from different cuisines, including Radmila's native Czech Republic. A wide variety and reasonably-priced selection of beer and wine will be offered. Also available is Caribou coffee.

Dolce may seem small but plans include low key music and outdoor seating as soon as weather permits. Patio heaters will keep the outdoor area comfortable. Sixty people can be seated in the dining and the patio areas

Presently Dolce is open Wednesday through Monday and closed on Tuesday. Currently hours are 11 a.m. to 7 p.m. Sunday, Monday, Wednesday and Thursday; 11 a.m. to 9 p.m. on Friday and Saturday. The hours will change as the summer season arrives, and on the weekends in the summer the couple plans to offer breakfast.
