Wisconsin’s cheese production rises 8.2 percent in a year

The government said Wisconsin cheese factories pumped out 8.2 percent more cheese in August than in the same month a year ago.

That’s about three times the national increase of 2.6 percent.

And California, the nation’s No. 1 milk-producing state, continued to see its cheese output drop another 2.4 percent.

Wisconsin, the nation’s top cheese-maker, has been widening its gap over second-place California for some time.

Wisconsin produced 224 million pounds of cheese in August.

And the state’s out-put of cheddar rose a whopping 11.8 percent over the past year. All told, America’s cheese-makers produced 850 million pounds in August.
